Rice is a staple food in a lot of Indian states and provides various essential nutrients including fiber and B vitamins. From Kolkatta to Kerala, rice has been loved and paired with anything from a piece of grilled fish to a delicious sambar. The fact that it is inexpensive makes it more accessible and acceptable to locals across states.
Since rice is rich in carbohydrates, it’s often linked with weight gain and hence, avoided by most health conscious people. But guess what? Sudhari James, a researcher in Sri Lanka has found a way to cook rice which will not make it calorie light but also offer more benefits.
Here’s how you can do it:
Add coconut oil to a pot of water and boil it for some time.
The quantity of water should be 3 percent of the rice you want to cook.
Add rice to the pot and let it cook.
Once the rice is cooked, refrigerate it for 12 hours before you plan to eat it.
Once it’s refrigerated, simply heat the portion in the microwave before serving.
Now, what exactly has happened to your rice after doing all this?
Not all starches present in the rice are equal. There are some that get converted into glucose and then glycogen and hence take lesser time to digest. What you need to get rid of from your body is this excess glycogen that gets stored in. On the other hand, the resistant starches are processed in the body over a long time, which are not turned into glucose or glycogen as they are difficult to get digested. Thus, they help reduce digestible starch which in turn leads to lower calorie intake.
